Last night Larissa and I had a friend over to eat dinner and watch the Wolverine movie. I made pasta with pesto.
It was the first time I’ve ever worked with pesto. I made the sauce out of a mixture of pesto and cream of celery soup. I mixed in half of a red pepper and a couple of chicken breasts.
We had spaghetti noodles on hand, but if I was planning this from scratch I’d naturally want to go with penne or something similar. Still, noodles are noodles, right?
Next time I think I’ll also increase the ratio of sauce to noodles. I found the flavour got hidden too much by the pasta. Maybe that’s because my usual experience with pesto is a Massive Pesto Overload. I haven’t yet found the happy pesto medium, I guess.

Oy.
It tasted good. There just wasn’t enough flavour to go around.
IMO you can’t skimp on the pesto. Pasta should be nice and green when you’re done. Expensive, yes, but worth it.
